Tis the season to be jolly!!!!!!!!!! Merry Christmas and happy new year folks. The most interesting and enjoyable part of this festive season is the FOOD!!!! YES, all the yummy food recipes to be tried and devoured gloriously.
Food basically gives me life and makes me jolly and I would love for you to be part of my world. I’ll be sharing with you some lovely recipes to try out for yourself and your Nigerian friends and family who will pay you a visit in the new year.
This popular dish created the war between us and our sister country Nigeria. It’s an all-time favourite for many and I choose to describe it as the most aromatic, flavoursome and happy one pot rice meal.
There are so many recipes for Jollof according to preference with room for improvisation as with most of our African dishes. You can try the vegetarian version, add some grilled meat, chicken or any loving goodness you prefer to have with this all-time favourite.
I present to you my version of Ghana Jollof which is way better than Nigerian Jollof for you to try.
Ingredients (4 servings)
- 3-4 cups or 600g of basmati rice
- 5-10 fl.oz olive oil (any type of oil can be used)
- 2 tablespoons of tomato puree
- 2 medium sized onions
- 1 onion chopped
- 4 fresh tomatoes or 2 canned plum tomato
- 2 fat cloves of garlic
- a piece of ginger
- 4 chilli pepper (if you don’t like it spicy)
- dried mixed herbs
- 1 bay leave
- 1 stock cube (vegetarian or otherwise)
- 1 Maggi cube (optional)
- salt to taste.
Method in Preparation
- Blend your garlic, ginger, chillies, 2 onions, fresh or canned tomatoes and set it aside for later.
- Heat oil in a non-stick pan and fry the chopped onions till soft, then add tomatoes and cook for about 3-4 minutes
- Add the blended mixture and leave to cook till the tomato mixture has lost its raw taste and the oil is visible at the top.
- Add the stock and Maggi cubes, bay leaf and a sprinkle of mixed herbs.
- leave to simmer for about 3 minutes whiles you rinse the rice to remove excess starch.(this helps the rice to come out finely cooked)
- Add the rinsed rice to the sauce and stir to prevent it from sticking to the bottom
- Now add 2 cups of water to the rice and sauce mix and stir, add salt to taste and cook till water is almost evaporated.cooked.cover and simmer on low heat till rice is cooked.
- serve with fried plantain, or some sumptuous salad on the side.
